Garlic Chicken

3-4 lbs chicken
1 large onion sliced
1 Tablespoon olive oil
2 teaspoon kosher salt
2 teaspoon paprika
1 teaspoon pepper
20 garlic cloves pealed

Put onion slices on bottom of cooker.  Mix chicken with remaining ingredients and put in cooker on low for 6-8 hours until tender and cooked through.

Oatcake Recipe

This recipe is a good alternative to granola bars; they're slightly sweet and very good.

3 cups rolled oats (quick cooking)
1-1/2 cups flour
½ cup sugar
½ teaspoon salt
¼ teaspoon baking soda
1 cup shortening
2-1/2 tablespoons cold water

Mix oats, flour, sugar, salt and soda together until evenly blended.  Cut in shortening until mixture resembles coarse meal.  Add cold water 1 tablespoon at a time until mixture easily forms a ball.

Roll ball into rectangle, ¼ inch thick.  Cut in oblongs or squares.  Bake at 375, 15 to 20 minutes or until slightly browned on top.

Makes 2 to 2-1/2 dozen.  May be doubled.

Sweet Dill Pickles

In each jar place:
1 Tbsp. dill
1 bay leaf
1 garlic clove

For the brine:
1 qt. white vinegar
1 qt. water
1/2 C. canning salt
1 1/2 C. sugar

pour brine into jar full of cucumbers, and water bath for 10 minutes.

We use this recipe for sandwich pickles.

Stevens Family Sweet Potatoes

4-6 big sweet potatoes
Boil and mash

Add:
1 C. sugar
dash of cinnamon
1/2 C. butter melted
2 beaten eggs
1 tsp. vanilla

Mix and put into a 9x11" pan

Topping:
1/3 C. butter
1 C. brown sugar
1/2 C. flour
1 C. nuts (pecans or walnuts)
Put on top

Bake at 350 for 30 minutes - awesome!

Stevens Family Easy Pie Crust

2 C. flour
1 1/2 tsp. salt
1/2 C. + 2 Tbsp. oil
1/4 C. + 2 Tbsp. milk

pour liquids mixed into dry ingredients mixed - and stir
divide into 2 - flatten each slightly
put between 2 sheets of wax paper and flatten more - flip into pie tins
Bake at 350 for 15-20 minutes - Easy!

Howard Family French Bread

1 Tbsp. yeast dissolved in 1/2 C. warm water
Add 1 Tbsp. sugar and 1/2 Tbsp. salt
1 C. very hot water - add 1 Tbsp. oil
Mix with 2 C. flour and then add 2 C. more flour and knead for a few minutes.
Let rise till doubled.
Shape and let rise again.
Bake at 375 for 25-30 minutes

Microwave Cashew Brittle

1 C. sugar
1/2 C. white corn syrup
1 1/2 C. large unsalted cashews
1 Tbsp. butter
1 tsp. vanilla
1 tsp. baking soda

Take first 2 ingredients and microwave for 3 minutes and then stir.
Then microwave for another 3 minutes and stir in cashews, butter and vanilla.
Then microwave for 3 minutes. Add baking soda and pour into lightly buttered cookie sheet.

Cool and break into bite size pieces.

use the back end of a wooden spoon to stir it in

*salted cashews are also good to use
