Homemade Ricotta Cheese

½ Gallon whole milk
-bring up to 200 degrees F in double boiler
Stir in 1/8 C. of vinegar – take off heat
Allow mixture to sit until it curdles
Drain in a cloth
Add 2 Tablespoons Butter and 1 teaspoon baking soda.
